Role & responsibilities

The Chef - Indian Cuisine (South Indian & Continental Breakfast Focus) is responsible for the skillful preparation and presentation of a diverse range of Indian dishes, with a particular emphasis on authentic South Indian breakfast specialties and a high-quality Continental breakfast selection. This role requires a strong culinary background in Indian cuisine, especially South Indian breakfast items, as well as proficiency in preparing standard Continental breakfast fare. The Chef will contribute to menu development, maintain kitchen standards, and ensure efficient and high-quality food production for our guests' breakfast experience.


  • South Indian Breakfast Preparation:
    • Prepare a variety of authentic South Indian breakfast dishes to a high standard, including but not limited to dosas, idlis, vadas, uttapam, pongal, sambar, and various chutneys.
    • Ensure the quality, taste, and presentation of all South Indian breakfast items are consistently excellent.
    • Follow traditional recipes and techniques to maintain the authenticity of the cuisine.
  • Continental Breakfast Preparation:
    • Prepare a comprehensive Continental breakfast selection, including pastries (muffins, croissants, danishes), cereals, fresh fruits, yogurts, cheeses, cold cuts, and potentially cooked-to-order egg dishes.
    • Ensure the freshness, quality, and appealing presentation of all Continental breakfast items.
  • Indian Cuisine (General):
    • Possess a broad knowledge of Indian cuisine beyond breakfast, with the ability to prepare other popular Indian dishes as needed (e.g., curries, biryanis, tandoori items).
    • Assist in the preparation of Indian dishes for other meal periods or special events as required.
  • Kitchen Operations:
    • Maintain a clean, organized, and efficient work station.
    • Follow recipes and production guidelines accurately.
    • Ensure proper storage and handling of all food items.
    • Operate kitchen equipment safely and efficiently.
    • Assist with mise en place and food preparation tasks.
  • Quality Control & Presentation:
    • Ensure all dishes are prepared according to established recipes and quality standards.
    • Pay attention to the presentation of all food items to ensure they are visually appealing.
    • Report any food quality issues or concerns to the Sous Chef or Executive Chef.
  • Hygiene & Safety:
    • Adhere to all food safety and hygiene regulations and procedures.
    • Maintain a clean and sanitary work environment.
    • Ensure proper handling and storage of food to prevent contamination.
  • Teamwork & Communication:
    • Work collaboratively with other kitchen staff.
    • Communicate effectively with colleagues and supervisors.
    • Assist other team members as needed.

Preferred candidate profile

  • Proven experience as a Chef or Cook with a strong focus on Indian cuisine, particularly South Indian breakfast.
  • Demonstrated ability to prepare a wide range of authentic South Indian breakfast dishes with excellent taste and presentation.
  • Experience in preparing standard Continental breakfast items to a high quality.
  • Solid knowledge of general Indian cooking techniques and ingredients.
  • Ability to follow recipes accurately and consistently.
  • Strong organizational and time-management skills.
  • Ability to work efficiently in a fast-paced environment.
  • Good communication and teamwork skills.
  • Knowledge of food safety and hygiene practices.
  • Culinary certification or relevant training is a plus.
