Job Description

Roles & Responsibilities of F&B Controller

1. Cost Control & Analysis

  • Monitor daily food and beverage costs to ensure alignment with budgets
  • Analyze cost variances and identify causes of overspending or inefficiency
  • Review and approve wastage reports, spoilage, and breakage logs

2. Inventory Management

  • Manage and oversee receiving, storage, and issuance of all F&B items
  • Ensure accurate stock records and regular physical inventory counts (daily/weekly/monthly)
  • Maintain par levels and help prevent overstocking or shortages

3. Menu Engineering & Recipe Costing

  • Work with Executive Chef and F&B Manager to:
    • Calculate food cost percentages
    • Prepare recipe costing sheets
    • Assist in menu pricing to maintain target margins

4. Purchasing & Receiving Control

  • Verify items received match purchase orders and invoices
  • Ensure quality and quantity standards are met during deliveries
  • Flag discrepancies and coordinate with purchasing or suppliers

5. Reporting & Documentation

  • Generate and submit regular reports:
    • Daily cost of sales
    • Consumption analysis
    • Waste and variance reports
    • Month-end stock reports
  • Maintain proper records for audits and internal controls

6. Departmental Coordination

  • Work closely with:
    • Executive Chef for kitchen stock and usage
    • F&B Manager for beverage control and outlet performance
    • Accounts Department for reconciliation and budget planning

7. Profitability Optimization

  • Identify and recommend cost-saving opportunities
  • Suggest supplier alternatives, portion controls, or process improvements
  • Monitor and control portion sizes and recipe compliance

8. System & Compliance Oversight

  • Ensure proper use of POS and inventory systems (e.g., FMC, Micros, BirchStreet)
  • Implement HACCP, FIFO, and hygiene standards in storage and handling
  • Support internal audits and ensure compliance with finance and food safety policies

9. Loss Prevention

  • Detect and report instances of theft, misuse, or stock discrepancies
  • Conduct surprise spot checks and ensure proper documentation of transfers
