Job Location - BKC Job Overview: We are seeking an experienced and passionate Executive Sous Chef specializing in Indian cuisine to join our culinary team. The ideal candidate will assist the Executive Chef in managing kitchen operations, menu planning, food preparation, and maintaining the highest standards of food quality and hygiene. Key Responsibilities: Kitchen Leadership: Assist the Executive Chef in overseeing daily kitchen operations, ensuring smooth functioning, efficiency, and adherence to high culinary standards. Menu Planning & Development: Collaborate with the Executive Chef to design and curate menus that reflect the rich flavors and variety of Indian cuisine, while incorporating seasonal ingredients and modern techniques. Food Quality & Presentation: Ensure that all dishes meet the restaurants quality standards in terms of taste, presentation, and consistency. Emphasize authentic flavors and regional Indian cooking methods. Team Management: Supervise, train, and mentor kitchen staff, including chefs, line cooks, and support personnel. Foster a collaborative and positive team environment while promoting continuous learning and development. Inventory & Ordering: Oversee inventory control and manage stock levels for all ingredients, especially specialty Indian spices and herbs. Coordinate with suppliers to ensure quality and cost-effective sourcing. Health & Safety Standards: Ensure the kitchen operates according to food safety, hygiene, and sanitation regulations. Monitor and maintain a clean and safe working environment for all staff. Cost Control & Budgeting: Assist in managing the kitchens budget by controlling food costs, minimizing waste, and optimizing ingredient usage. Ensure food preparation meets cost-efficiency without compromising quality. Quality Assurance: Conduct regular checks on food preparation and storage to ensure proper standards are maintained throughout the kitchen. Enforce policies on portion control and consistency. Guest Interaction: Occasionally interact with guests, particularly for special events, to ensure their satisfaction and provide personalized experiences that reflect the essence of Indian cuisine. Collaboration: Work closely with other departments such as front-of-house, marketing, and management to ensure smooth operations and excellent service. Qualifications: Experience: Minimum of 5-7 years of experience in an Indian kitchen, with at least 2-3 years in a supervisory or sous chef role. Culinary Expertise: In-depth knowledge of Indian cuisine, including regional specialties, spices, traditional cooking methods, and modern interpretations. Leadership Skills: Proven ability to lead a team, with excellent communication, organizational, and managerial skills. Culinary Education: Degree or diploma from a recognized culinary institute, or equivalent professional experience. Creativity & Innovation: Strong culinary creativity and the ability to design innovative dishes while maintaining the authenticity of Indian cuisine. Attention to Detail: Strong attention to detail, particularly with food preparation, plating, and hygiene standards. Multitasking Ability: Ability to work under pressure, prioritize tasks, and maintain high standards of work in a fast-paced environment. Health & Safety Knowledge: Thorough understanding of food safety regulations, hygiene practices, and kitchen sanitation procedures.
